You need to first narrow down your needs like what you would like to monitor? how would you like to monitor?
There are also third party tool available to monitor sql server like mom, redgate tool etc.

I guess the question is, do you want grow your own monitors or do you want to go & purchase some of the more sophisticated monitors?
If you want to grow your own, I'd start with setting up event forwarding. Instead of trying to configure email on every server in the domain, and make yourself crazy, set up email on one server. Then configure the rest of your servers to forward all events to that server. You can do a search for event forwarding to find articles and it's in the Books Online. After that, you'll want to set up a method for running perfmon on your servers. To run it 24/7 on lots of servers will require quite a lot of work on your part, but it's doable. I'd also suggest spending time setting up a method to collect some amount of trace data each day so that you can identify the longest running procedures, most frequently called, etc.
If that's all too daunting, then look to purchase software like Red Gate's SQL Response or Idera's SQL Manager or Microsofts Operations Manager. Those tools will do tons of that work for you and more.

Thank you for pointing event forwarding feature of SQL Server.
Just would like to know is it possible in event forwarding to filter the few or repetative errors or use multiple filters...? like

I'm pretty sure you can't limit the forwarding, but I'm pretty sure you can limit the number of alerts or emails that are sent from the email enabled sql server. I'd have to look it up to be sure.

Idera SQL Diagnostic Manager is a good product which is very much geared towards what you are trying to do.
Don't know what your budget is, but this is a good option if you have the money available.
