    To my knowledge there aren't any major differences between 2000 and 2005 as far as it comes to things you're looking into.

    Personally I would go with broader raid 10 set...

    same way as before, open server properties and go to the "processor" tab.

    Just remember to untick the affinity settings below the box, so you can modify your processor count.
